Food /Body Freedom Tip

Curate your virtual environment!

We are a product of our environment, so ask yourself, how much does your virtual environment impact how you feel about yourself?

We might think that seeing people on social media with the ‘perfect body’ is inspiring us... But studies have shown that this actually drives feelings of shame and disconnection which leads to self-soothing through often detrimental coping mechanisms.

Be intentional with your social media feed. Use the Marie Kondo method and unfollow anyone who does not truly bring you joy!

A Delicious Recipe

This is the recipe I made at Christmas the past few years and for Easter this past weekend. OMG Gisa you NEED to try it! Super easy and soo good!

Super Easy Lemon Bars

-1 cup plus 2 tablespoons all-purpose flour, divided

-1/2 cup plus 2 tablespoons powdered sugar, divided
-1/2 cup (1 stick) unsalted butter, melted
-1/8 teaspoon kosher salt
-2 eggs
-1 cup granulated sugar
-1/4 cup fresh lemon juice
-1 lemon finely zested

  1. Preheat the oven to 350°F.
parchment paper (this will make it easier to remove the lemon bars in one piece so you can cut them properly on a cutting board).

  2. In a medium bowl, combine 1 cup flour, 1/2 cup powdered sugar, butter, and salt with a fork until a crumbly dough forms. Press the dough into the prepared pan so it covers the bottom and goes about 1/2 inch up the sides. Bake about 10 minutes or until it is a light golden brown.

  3. While the crust is baking, whisk together the remaining 2 tablespoons flour, eggs, sugar, lemon juice and fine lemon zest.

  4. Remove crust from oven, pour the lemon mixture over the crust.

  5. Bake 20-25 minutes, or until the center is set (doesn’t jiggle when you shake the pan).

  6. Allow lemon bars to cool for 30 minutes in pan. Using parchment, remove lemon bars and set on cutting board. Allow to cool completely or refrigerate until completely cooled.

  7. Cut into 16 squares. Sprinkle the remaining powdered sugar over the cooled lemon bars before serving.

Client Win To Celebrate

This week I want to celebrate my client Laura Age 27.

Here is just a small snippet of what she had to say following the completion of my 90 Days to Food Freedom 1:1 Coaching Program

"Although I wasn't conscious of this at the time, I discovered Victoria when I was finally ready to start investing in mending my relationship with myself (which is what really lies at the heart of all my issues with food, exercise, and my body).

Victoria gave me the language and tools I needed to re-establish connection with myself and to build trust with the parts of me that I had long since banished. The spirit of compassion she brings to each call clearly stems from this internal well of compassion she has for herself.

She's been a model for me of a woman with shared struggles who decided to shift her energy to create her own reality and on her own terms. One of the most impactful moments I've experienced with Victoria involved her holding me accountable for hiding and avoiding (a habit I've struggled with for a long time).

She has a firm but gentle way of seeing me in my full mess while challenging me to understand myself and my behavior, and to rise above the (sometimes pretty destructive) path of least resistance. Could not recommend this lady more emphatically!"

If you’re feeling pulled to change your life, click the button below to book your 30 minute Blueprint To Freedom Call where we’ll determine the 3 things holding you back from food freedom and assess if you're a good fit for my program.
