I am writing this to you right now while sitting in a coffee shop here in Portugal, and there is pumpkin spice-themed everything, aka fall feels like it's here. 

Pumpkin Spice Latte Overnight Oats


  • 1/4 cup brewed coffee, chilled
  • 1/4 cup milk
  • 2 Tablespoons plain Greek yogurt
  • 1/4 cup pumpkin puree not pumpkin pie filling
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla
  • 2 1/2 teaspoons sugar 
  • 1 Tablespoon chia seeds
  • 1/2 cup old fashioned oats 
  • 1 teaspoon mini chocolate chips


  1. In a bowl or jar, combine all of the ingredients except the oats and stir until combined and smooth.
  2. Add the oats and stir until moistened.
  3. Place in the refrigerator overnight.
  4. If desired, stir in additional milk to desired consistency before serving, and sprinkle on toppings.
